House insurance legal cover usually includes employment disputes but I doubt it'd cover this.
Your Mum not applying for probate is unfortunate but shouldn't ultimately render the wills invalid. The only issue there really then is the challenge to the validity of the wills, which unfortunately is a family money-maker for many people and they know it.
This is why I recommend my clients review/reattest their wills every few years and why I also conduct a vulnerable client assessment every year to get something in writing on my files to defend issues of alleged incapacity.
Sucks mate - and the legal costs won't be cheap
