Sound like you need to set your stall up properly mate. Knocking over tables, sounds like a bar fight ! Lol I know what you mean about youtoob, diving in is a great way to learn but it's cost me in the past. Advice,manuals and videos should see you right. Oh and a proper bench !

Would this be OK for measuring shims. As what size I can see after years of pounding there not going to be correct

Yep that or a micrometer. You need to perfect your feel tho. @ £10 I would check its calibrated against your feeler gauges 1st pal

Measure the shim across it's face in 2 places it doesn't matter what size it is now, although they don't really wear.
Then add the shim size to the measured clearance. Take away the mid point of clearance and find a shim size close to that.
Mid point is fine exhaust can be a bit looser due to heat expansion closing the gap more than inlet which is cooler.

Hmm I can get a 0.38mm in the inlets I take it I need to measure with the heads on??

You need the cams in.
